kiptopeke state park / camping

a few weeks back we got to spend the weekend camping at kiptopeke state park along the eastern shore of virginia. this is such a great campsite and our second visit there. we went with another couple and had a blast! the weather forecast was not very promising leading up to the weekend but we stuck to our guns and went regardless of the rainy forecast....and SO glad we went. the weather was perfect and we only had rain during our last night there. it was crazy to be in a tent and have rain pour for hours. kinda scary / kinda cool.

there is something about camping that is so refreshing and peaceful. we don't go camping enough! even if you aren't one that likes to rough it--just give it a try at least once! you never know-you might find your inner camper!

we made this delicious chili recipe passed on from a sweet friend and just about licked the bowl clean! here is what we threw in:
one onion sauteed in oil--then add 4 cloves garlic
in another small pan heat up the spices: chili powder, cumin, ancho chili, cayenne or chipotle to taste
heat those on low until you can smell them
add chorizo if you want--saute with spices
then add all of the canned stuff in a large pot and combine it all together with the rest:
black beans, pintos, can corn, petite diced tomatoes
toss in a bay leaf, lime, cilantro
let it simmer cook for a bit and you'll have a delicious chili

{clearly i am not a recipe blogger so please forgive the lack of details--you can be vague with chili right?}

  4. Wow you guys look like you having a grand time! I have not gone camping in forever it was not something I did a lot of growing up in NY but I did camp out in Friday Harbor on the San Juan Islands in the PNW.
